http://www.mathtalk.com  Metroplex Voice Computing carries Arithmetic Talk where elementary students "speak" their math into the computer.  Also carries Math Talk which allows a user to voice math from grade 6 to Ph.D. level into the computer and a Math Into Braille program.  Is working on developing these programs to be used by the visually impaired.

http://dots.physics.orst.edu/  This is the home page of the Science Access Project group at Oregon State University. The purpose of this group is to develop methods for making science, math, and engineering information accessible to people with print disabilities.
