Nutrition Tip: Strawberries

Strawberries have more vitamin C than some citrus fruits. They also are high in fiber, folate, potassium and antioxidants, making them a natural means of reducing the chances of heart disease and high blood pressure.

Strawberries, a member of the rose family, are the first fruit to ripen in the spring. On average, there are 200 seeds in a strawberry. The strawberry is the only fruit with the seeds on the outside of the fruit.

HEALTHY TREAT: Strawberries contain more

also are high in fiber, potassium and
antioxidants.

A dozen medium strawberries contain 48 calories and includes calcium. Magnesium, potassium, folate, dietary fiber, iron, phosphorous, Vitamin C and Vitamin A also are included in the fruit.

Strawberry Salsa is one strawberry recipe you can make and enjoy. Ingredients include 1 cup coarsely chopped strawberries, 1 tablespoon orange juice, 1 teaspoon grated orange peel, 1 green onion, finely chopped; 1 teaspoon Dijon-style mustard, 2 tablespoons dried currants and 2 tablespoons of red wine vinegar. Mix all ingredients in a bowl. Chill and serve with grilled chicken or fish. The recipe makes 1 ½ cups.
