The Roosevelt Building houses offices and labs for the Dietetics and Human Nutrition program.

The Office of Nutritional Services

This office is a four room suite that allows the Coordinated Program in Dietetics students to gain hands-on experience in business operations, assessment and counseling of clients, nutrition education and the use of equipment aiding clients to manage their nutritional status. The equipment includes Bioelectrical Impedance used to determine body composition, nutrient analysis software helping the student and the client reviewing nutrient intake, and Dual-energy X-ray absorptiometry (DEXA) to determine bone mineral density and body composition.

Food Lab

The updated food lab provides students knowledge and experience in the principles of food science, techniques of food preparation, evaluation, and modification of recipes.
